This book is more than a book about delicious food. It is part of a large pioneer project which is aiming to show the world the unexpected possibilities and resources to be found in Greenland’s nature and culture.
    The book focuses on angelica – the finest in the world. Everywhere in the picturesque nature in Southern Greenland it coexists with arctic thyme and crowberries getting its power from the many minerals in the subsurface.
    In his recipes, the chef Henri Gordon Lee has cleverly transferred the original and unique Greenlandic taste to the modern cuisine.
